My Mostly Veggie Chilli Recipe

Figured I would share my recipe for the Chilli I love to make.  It started out as a vegetarian chilli, but it just tasted so much better when I added some meat.  Very easy to make as I just mix it all together in a crock pot and cook overnight.

The shopping list:

  • Large can of tomato puree - 16oz I believe
  • Can of chopped and/or diced tomato
  • Can of red beans
  • Can of black beans
  • Bag of frozen peas/corn mix
  • Bag of frozen chopped green pepper
  • Bag of frozen chopped onion
  • 2 packets chilli seasoning
  • 1 lb Ground Turkey
  • Bottle of Franks Hot Sauce
  • Crushed Red Pepper Spice Bottle

Instructions

Cook the ground chicken.  Mix all the tomato products, beans, veggies and chilli seasoning into the crock pot.  Cook on low overnight.  Add hot sauce and crushed pepper to season to your taste.  I prefer the hot sauce for the "hot" taste, and the crushed red pepper for the real after-kick if you put it in before cooking overnight.

Creates a hearty yet rather healthy chilli that will last you all week.
